My kids love tacos! And, I love how with just a ingredients we can have a fun dinner with family and friends. I have found a new obsession with Beef Taco Boats, and I am sure you will love them too!
Old El Paso has two different sizes of taco boats. While my hubby and I liked the larger boats, the smaller mini boats were perfect for, the younger kids. Plus, you could use the mini boats an appetizer!

As a mom, I love to find new ways to spend time together as a family and have a few guests over. And we are always looking for ways to educate our kids about other cultures. Lately, my kids have been obsessed with learning about Mexico and their history. I think this is partly is due to the facts that their cousins now live in Mexico.
With Cinco de Mayo coming up we found it was a perfect time to teach the kids what this holiday was about. And to be totally honest, I really didn’t know what it was all about. I thought it was similar to USA’s Independence Day, but instead it a celebration dedicated Mexican Army’s 1862 victory over France at the Battle of Puebla during the Franco-Mexican War (1861-1867).
What is interesting about it is a relatively minor holiday in Mexico. But, in the United States Cinco de Mayo has evolved into a celebration of Mexican culture and heritage, particularly in areas with large Mexican-American populations. You can learn more about Cinco de Mayo here.

Easy Beef Taco Boats You Kids Will Love
We love to keep our tacos simple, and easy to make. That is why I love this dinner kit here. It has everything you need minus your choice of meat and fresh toppings. We usually pick up at least two dinner kits this one and a crunchy taco shell kit so that everyone can have their favorite type of taco.
Here are few pictures from our last shopping trip to Walmart. The kids had a blast picking out their taco dinner kits.

How to Make Beef Taco Boats
My recipe is based on one dinner kit, but if you have several taco lovers like we do you may want to double it.
Ingredients:
- 1 pound ground hamburger
- 1 Old El Paso Taco Boat Kits
- Mexican Crumbling Cheese (or your favorite shredded cheese)
- Cilantro
- Sour Cream
- Tomatoes
Directions:
- Brown and crumble ground beef (drain if needed)
- Mix 2/3 cup of water with taco seasoning pack
- Once meat is thoroughly cooked, you then pour seasoning mixture over meat.
- Continue to simmer meat and seasoning mixture till most of the water evaporates. (You don’t want runny tacos. Yuck!)
- Chop tomatoes, cilantro, and crumble cheese.
- Microwave Taco Boats for 20-25 seconds.
- Then assemble and enjoy!
We always like to serve out tacos with a little-refried beans and Ol El Paso are really good!
