Low Carb Mini Crustless Pizzas – Easy Appetizers for Game Day
My hubby and I are trying very hard to eat better this year, and for us, that means cutting out so many carbs and focusing on eating more protein, fruits, and veggies. Plus, we have made it a goal only to eat out twice a week! Eating out is a huge problem for us because we love it… But, it is just not a healthy option or very budget friendly. I have been CRAVING pizza something fierce, and low carb pizza is hard to come by! I hate thin crust, and I was looking at Pinterest last week and found this No-Crust Pizza Bites. But, I didn’t like the size of hers and was wanting a bite-size option. So with a few tweaks and my favorite RAGÚ® Homestyle Sauce, I was able to make the perfect low carb mini crustless pizzas.
My mini pizzas would be perfect for game day food since they are so quick to make. And you can eat them without silverware! But, if you are not really into game day food they would also be a great after-school snack. You could also make them for dinner paired with a nice salad or steamed broccoli!

Ingredients
- Canadian Bacon (Thick Round Slices)
- One Jar of RAGÚ® Homestyle Sauce
- Shredded Mozzarella Cheese (about 1.5 cups)
- One Can of Pineapple Chunks (well drained)
- Melted Coconut Oil or Your Favorite Oil

Directions:
- Preheat Oven to 350°
- Lightly oil your pan.
- Arrange Canadian Bacon slices over the pan.
- Pinch and Fold them to get them to fit into the muffin cup. (See video)
- Add one pineapple chunk on top Canadian Bacon and lightly push it to hold Canadian Bacon down.
- Next, add one generous teaspoon of RAGÚ® Homestyle Sauce
- Top with shredded mozzarella cheese
- Bake for 8-10 minutes until cheese is golden brown and melted.
- Let cool for a few minutes and remove with a fork.
